Located on the picturesque Tchefuncte River in Madisonville, LA is Tchefuncte's Restaurant. This restaurant boasts classic upscale dining facility with a state-of-the-art open kitchen. Tchefuncte's is searching for an enthusiastic Sushi Chef to join our team. An overview of your responsibilities are listed below.
Responsibilities:
- Control quality and consistency of all food served.
- Ensure station is set 15 minutes prior to service.
- Ensure all food supplies necessary for service are in appropriate supply on a timely basis.
- Assist in controlling food cost.
- Responsible for all foods flowing to and from assigned station.
- Assist in producing and plating all foods for all restaurant outlets/functions.
- Proper storage for advanced production.
- Filling out daily/nightly prep sheets and prepping to assigned par levels.
- Reporting any maintenance or security problems.
- Proper station set - breakdown and general cleaning.
- Ensure work area is clean and clear of standing water, debris or any objects that can obstruct the job duties from being performed safely, efficiently, and effectively.
- Fine dining experience is a preferred.
Qualifications:
- Have at least 3 years' experience in high volume sushi production and omakase style service.
- Possess a passion for the culinary arts and the hospitality industry.
- Possess basic knowledge of proper food handling, food temperatures, kitchen equipment, tools and small wares.
- Able to follow recipes and adhere to food allergies.
- Have a strong sense of urgency and responsibility for completing work quickly and correctly.
- Possess a coachable and team player demeaner.
- Exhibit clean work habits and ownership of a safe, clean work area.
- Possess the ability to excel in an environment with a repetitive task in a steady or fast, even pace.
- Work within established standards and procedures.
- Be available to work early, mid-day and evening shifts, weekends, and holidays.
- Be able to lift at least 50 pounds.
