Position Title: Resort Executive Sous Chef
Business Unit: Food & Beverage
Position Reports to: Executive Chef
Positions Reporting to this Role: Resort Culinary Teams
Location: Washington
Wage Range: $78,000 - $80,000 DOE
JOB SUMMARY
The Executive Sous Chef plays a vital role in overseeing all kitchen operations, ensuring that our culinary standards and policies are met. You will manage outlet chefs, monitor food preparation, quality, and presentation, while also controlling food quality, production, sanitation standards, and labor costs.
ESSENTIAL DUTIES
- Ensure exceptional guest service through consistent execution of menus and recipes.
- Assist outlet chefs in training culinary and stewarding personnel.
- Review, evaluate, and coach all outlet chefs.
- Support the Executive Chef in daily kitchen operations, ensuring high-quality products and minimal waste.
- Help prepare and create menus, including banquets and daily specials.
- Organize food festivals and special culinary events.
- Maintain cleanliness and good working order of all kitchens and storage areas.
- Ensure strict quality control on all food items served.
- Monitor food inventory for efficient operations.
- Guide and train outlet chefs and assist on the line as needed.
- Ensure compliance with safety and health standards.
- Evaluate incoming products for quality and pricing.
- Maintain a regular cleaning and maintenance schedule for all kitchen areas and equipment.
- Provide training and professional development opportunities for kitchen staff.
- Support safe work habits and a safe working environment.
- Attend all meetings as directed by the Executive Chef.
- Perform other duties as directed.
KNOWLEDGE, SKILL AND ABILITY REQUIREMENTS
- Minimum 5 years of culinary experience, with at least 2 years as a Sous Chef.
- Creative problem-solver with passion and fresh ideas.
- Organized, dependable, and self-motivated.
- Strong team builder with the ability to manage and develop a team.
- Skilled in the use of kitchen equipment.
- Positive interaction skills with supervisors, management, coworkers, and the public.
- Ability to produce high-quality work efficiently.
- Working knowledge of various computer software programs.
- Remodel and new build experience is a plus.
PHYSICAL DEMANDS AND WORKING CONDITIONS
- Availability to work evenings, weekends, and holidays.
- Able to lift and carry a minimum of 20 pounds occasionally.
- Manual dexterity for operating computers and office equipment.
- Auditory and visual acuity for communication and equipment operation.
- Ability to work for extended periods sitting, bending, reaching, and speaking.
- Ability to stand, walk, kneel, push, and pull occasionally.
- Continuous communication with guests, supervisors, and employees.
